Who’s behind this
I’ll keep my name out of it — call me the brewer. I make Korean sool for a living, and I’ve been around it long enough that a bubbling jar still feels like the most interesting thing in the room.
I’ve spent time inside Korea’s brewing industry, working across production, quality control, and new-product development. A lot of that job was one stubborn question: why does the same recipe come out tasting different from one batch to the next? Chasing that answer — the temperature that drifted, the nuruk that behaved oddly, the day the fermentation ran a little too warm — taught me more than any textbook did. Do-chwi is where I translate that experience into something you can actually do at home.
I stay semi-anonymous because I’d rather this be about the brewing than about me. Fewer credentials, more jars.
Why this exists
Brewing Korean sool outside Korea is harder than it should be. The ingredients are unfamiliar, the good information is mostly in Korean, and a lot of guides assume you already know what a healthy fermentation smells like. Do-chwi is a free guide for anyone abroad who wants to brew Korean sool themselves — no shop, no paywall, no masterclass.
It’s just me writing down what actually works, in plain English, so you can skip a few of the mistakes I already made for you.
